Leftover Magic

The classic turkey sandwich never fails to please—heap turkey, cranberry sauce, gravy, and leftover stuffing on slices of thick bread and enjoy. But there are only so many of those you can eat. Stave off turkey fatigue by checking out these five fresh ways to use up your leftovers, courtesy of The Mom 100 Cookbook’s Katie Workman.

Thanksgiving Turkey Tacos

1. The “Pulled Pork” Turkey Sandwich. Shred your turkey meat, get a bottle of barbecue sauce and toss the turkey with the sauce. Add a few more splashes of white wine vinegar.

2. Turkey Taco Night. Shred the turkey meat and add some premixed taco seasoning or some cumin and chili powder. Sauté the mixture up with a little water to distribute the spices evenly. Set out all the fixings and you’ve got turkey taco night.

3. Turkey Posole Soup. This hack on a traditional Mexican stew features canned posole or hominy and chipotles. Click here to see the recipe.

4. Mashed Potato Patties. Blend the mashed potatoes with an egg and fry them up into little mashed potato cakes. (Also applies to sweet potatoes.)

5. Wake-Up Pie. Eat pie for breakfast. Have a great day.

And one last one for good measure. . . .

Fried Rice. Turn your rice stuffing into fried rice by adding egg, shredded turkey, odds and ends like carrots, celery, and fresh herbs, and seasoning with soy sauce.
