This week in Blue Plate Special news, we pull back the curtain to reveal the inner machinations of one of our very own cookbook editors, Liz Davis. She was kind enough to take a break from her editorial duties to give us a bit of inside scoop on her foodie routine. (Plus, we’ve got a giveaway of Liz’s favorite Workman cookbook of the moment!)

What’s your go-to dish when your supplies are running on empty? Roast everything in the kitchen that can be roasted, serve on warm farro or another whole grain, dress with something vinegar-y.

Which fresh herb is always in your crisper? Basil or rosemary.

What’s your favorite pantry ingredient, the one item you always make sure to have in stock? Olive oil. And Amy’s low-sodium vegetarian refried beans. Because you can take the girl out of Texas…

Daily/weekly food blog addiction? Love and Lemons, currently. But I use Feedly so I don’t have to choose.

Go-to meal when you have 30 minutes or less? Heated-up leftovers + an egg.

Snack to munch on while editing? POPCORN. It’s just air, right? Right, guys? Guys?

Cookbook you most often return to? These days, it’s Heidi Swanson’s Super Natural Every Day. But I’m pretty fond of Marcella Hazan, you know.

Cookbook you are most embarrassed to confess you have never cooked from? The Joy of Cooking.

Dish that sounds intimidating or looks impressive but is secretly easy? Any roasted meat. Homemade pasta.

Go-to dinner party standard? I try not to cook the same thing twice, but chilaquiles are always impressive. (Tortilla casserole = sounds fancy)

Scariest thing in your freezer right now? Extremely old bacon grease.

Kitchen tool or appliance you most often recommend? I am one of those purists who believe that you need very little other than a sharp knife, but the immersion blender is a wonderful invention.

Culinary innovation you are most proud of? The chocolate quesadilla. (Invented in college, it involves only a microwave, a flour tortilla, and small handful of chocolate chips.) And I was a connoisseur of the high-end breakfast taco before it was cool.
