From Sarah Leah Chase: The absolute prettiest and best-tasting carrots I have ever had are the rainbow carrots grown and sold by Chase’s Daily in Belfast, Maine. The sublime flavor cries out for a simple preparation so I rely on the French method of waterless cooking. Try this recipe with the best locally grown carrots you can get your hands on.

Chase’s Daily Rainbow Carrots

Serves 4 to 6

INGREDIENTS

  • 2 tablespoons (¼ stick) unsalted butter, or 2 tablespoons extra virgin olive oil
  • 1 pound small, tender rainbow carrots (no more than ¾ inch in diameter and 5 to 6 inches long), scrubbed but not peeled, tops trimmed with the very tips of the green stems left intact
  • 3 tablespoons finely minced peeled fresh ginger
  • Sea salt and freshly ground black pepper
  • 1½ tablespoons minced fresh flat-leaf parsley, chives, or dill

INSTRUCTIONS

  1. Melt the butter or heat the olive oil in a medium-size, straight-sided skillet over medium-low heat. Add the carrots and toss to coat with the butter or olive oil.
  2. Cover the skillet with a tight-fitting lid and continue to cook over medium-low heat, shaking the pan back and forth over the burner every now and again. The carrots are meant to cook by steaming slowly in their own moisture but not brown. Cook the carrots until they are crisp-tender, 15 to 20 minutes.
  3. Season the carrots with salt and pepper to taste and then sprinkle the herb of your choice over the, tossing to coat evenly. Serve the carrots hot.
