Green Bean PurÉe
(purée de haricots verts)
Makes five 3½-ounce (100 g) servings
5 minutes prep ~ 10 minutes cooking time ~ can be stored for 24 hours in the refrigerator ~ must be frozen at 0˚F
- 3⅓ cups (500 g) French green beans, fresh or frozen
- 1 teaspoon olive oil
1. Trim the ends of the green beans, if you are using fresh ones.
2. Put the green beans into a saucepan, cover them halfway with water, bring to a boil, cover, and cook over medium heat for 10 minutes. When done, about 2 tablespoons of water should remain.
3. Blend the green beans with the remaining cooking water and the olive oil until smooth.
Yummy Tips:
You can also make this purée by replacing half the green beans with sweet peas. The result will be slightly creamier and sweeter than the original recipe. For a taste of summer, add 2 fresh basil leaves before blending either version of this recipe.
