This recipe—perfect for kids—was born from a variety of inspirations: (1) A year ago in Austin, Texas, at a restaurant called Elizabeth, I tried a great take on lemonade, imbued with the flavor of jasmine tea. (2) Having recently returned from Brazil where lime typically replaces lemon, I decided to swap out the lemon for lime (though either fruit works). (3) And finally, one of my favorite summertime activities as a kid was running a lemonade stand. Lemonade is the ultimate kid-friendly thirst quencher. If you’re going to garnish such a mocktail, obviously rainbow sprinkles are essential!

Jasmine Limeade

MAKES 1

Ingredients

  • 1 cup water
  • 1 teaspoon jasmine tea leaves
  • 1⁄2 tablespoon honey
  • 1⁄2 cup rainbow sprinkles, for garnish
  • Lime or lemon wheel, for garnish
  • 4 teaspoons fresh lime juice (or 3 teaspoons fresh lemon juice)

Instructions

  1. Place the water in a small saucepan over medium heat and bring to a simmer.
  2. Add the jasmine tea leaves, then turn off the heat. Let the tea leaves steep, about 3 minutes, then taste the tea. If there’s not enough jasmine flavor, steep for another 1 or 2 minutes (be careful not to oversteep as jasmine leaves quickly become tannic).
  3. Add the honey and stir to combine. Strain the tea through a fine-mesh sieve and discard the leaves. Allow the tea to cool.
  4. Pour the sprinkles onto a small plate or into a shallow bowl. Run the lime wheel along the rim of a clear plastic Dixie cup to moisten it. Dip the rim of the cup into the sprinkles to coat.
  5. Fill the prepared cup three-quarters full with ice cubes, add the tea mixture and lime juice, and stir to combine. Garnish with the lime wheel.

Booze it up for the adults: Add 1⁄2 shot of gin or vodka.
