Warm Greek-Style Breakfast Grain Bowl

Top a small bowl of leftover warmed cooked millet with some chopped olives, tomatoes, fresh oregano, and crumbled feta. Fry up an egg in a bit of butter, slide it over the top, and season generously with salt and pepper.

Easy Smashed Avocado Toast with a Fried Egg, Cilantro, and Lime 

If you love guacamole—and who doesn’t?!—smear a simple homemade version of smashed avocado, cilantro, lime, salt, and garlic on toast and top it with a fried egg. Add on any other leftovers hanging out in the fridge—chopped tomato, a scoop of burrata cheese, or a handful of fresh corn.

Berry, Nutty Oatmeal

Add ½ cup fresh blueberries, 2 tablespoons of almond slivers or walnut pieces, and 1 rounded tablespoon of unsweetened protein powder to one packet of prepared organic oatmeal. Three minutes to yum.

Grilled Eggs with Grated Parmigiano-Reggiano and Bread Crumbs

Crack farm eggs into a small baking dish, top with heavy cream, grated Parmigiano-Reggiano, bread crumbs, and butter, and indirect grill until set, 5 to 8 minutes. Serve with grilled bread (aka toast) and crisps of grilled prosciutto.

Breakfast Tacos

Pile fluffy scrambled eggs, shredded pepper jack or cheddar cheese, cubed skillet potatoes browned to a perfect crisp, and (if you’re carnivorous) crumbled sausage or bacon in a flour tortilla that’s been warmed in the oven. Wrap tightly, and serve with a pile of salsa.

In a bowl, top a generous helping of Greek yogurt with sliced avocado, za’atar, Maldon salt, and high-quality olive oil. Scoop up with toasted pita or rice cakes, or eat with a spoon!

Crispy Farm Egg

I love a farm-fresh egg fried in about a tablespoon of grass-fed butter; the egg white gets crispy and the butter browns and gets even richer. Balance it with plenty of seasonal fruit, and wash it all down with a hot cup of coffee (I prefer decaf) with frothy coconut milk, a splash of maple syrup, and a dash of cardamom.
